COMPANY

Finger Food Products, Inc. is the creator and exclusive manufacturer of the Original Pizza Logs®, a licensed proprietary snack food sold to restaurants, retail establishments and at professional sports venues in Upstate New York and Pennsylvania. The company is a family-owned, second-generation business that has invested heavily in its new state-of-the-art facility, equipment and, most importantly, its employees.

SITUATION

Jason R. Cordova, Finger Food Products, Inc.’s President, recognized that Original Pizza Logs® had an enormous potential to expand through certification to the Safe Quality Food standard, a HACCP-based supplier assurance code for the food industry that would distinguish their products from international industry competition. This standard is the highest level of preventative controls required under the Food Safety Modernization Act (FSMA), SQF Level 2 Food Quality Certification.

SOLUTION

The company partnered with Insyte Consulting to assess the readiness of the organization and its current Food Safety Management System for achieving SQF 7.2 Level 2 certification. Insyte’s seasoned food industry expert conducted a gap analysis, introduced best practices and identified improvement opportunities. Changes were designed and implemented by the project team, then confirmed through a mock audit. Finger Food Products, Inc. passed its certification audit with flying colors on its first attempt and is now poised for further growth.
